You’d never guess the secret ingredient in this recipe is black beans. This protein-packed recipe is gluten-free, refined sugar free, and can be vegan if you omit the eggs/yogurt.
Black Bean Brownie Recipe
Ingredients
- 1 can of black beans
- honey
- coconut sugar
- melted coconut oil
- cacao powder
- salt
- vanilla extract
- baking powder
- Optional: eggs or Greek yogurt
Recipe
- 1 can of black beans, rinsed and strained
- 3 TBSP of honey
- 1/4 cup of coconut sugar
- 1/3 cup of melted coconut oil
- Blend
- 1/4 cup of cacao powder
- 1/4 tsp salt
- 1/4 tsp baking powder
- 1 tsp vanilla extract
- Blend
- Optional: either add 2 eggs or 1/2 cup Greek yogurt: Eggs will make it a brownie, Greek yogurt will make it a mousse and can be used as a cake layer
- Blend
- Fold in 1/4 cup dark chocolate chips (here are some sugar-free options)
- Pour into a glass cooking dish
- Bake for 25 – 30 minutes at 350 degrees F
- Cool and enjoy, or place in fridge overnight
- Serve with raspberries for even more tastiness 🙂
