4th of July Recipe: Easy American Flag Pie Recipe

I hope your summer’s off to a great start! As promised, here is the recipe for the American flag pie I made on the 4th of July.

Having only made a pie once before in my life, I was a bit apprehensive about whether or not this recipe (read: experiment) would turn out, but to my surprise it was SO easy and delicious.
The toughest part was getting the pie crust dough to crimp around the edges.
What You’ll Need:
A 9.5 inch glass pie dish
1 package of frozen pie crust (I purchased mine from Trader Joe’s. It comes frozen, so plan ahead because it will take about an hour to thaw!)
1 pack organic frozen strawberries, thawed
1 pack organic frozen blueberries, thawed
1.5 inch star-shaped cookie cutter
Ruler
Parchment paper
Foil
Preheat oven to 425°F

Instructions
Use a pencil and outline the top of the pie dish on parchment paper. Flip dish over to outline the circumference. You will use this shape to lay out the stars and stripes.
Roll out the thawed dough and place ½ of the dough in the dish
Use the remaining dough to create the shapes
Fold a section of foil over a few times to create a sturdy piece that’s equal to the diameter of the pie. Bend to create a 90° wedge. Place in the upper left corner of pie to section off the blueberry area.

Blueberry Filling
Combine 2 cups of blueberries with 4 tablespoons sugar. Add in 1.5 teaspoons of lemon juice.
Pour evenly into blueberry section.

Strawberry Filling
Combine 5 tablespoons of unbleached flour (I used gluten-free flour from Trader Joe’s) with
1/3 cup of sugar
1 tablespoon lemon juice,
1/8 teaspoon of salt
Mix and combine with 6 cups of hulled strawberries
Fill in remainder of pie

Cutting the Stars and Stripes
Using the cookie cutter, cut out at least 5 stars. I suggest cutting extra in case some of them brown faster than others.
Using the parchment paper and ruler, outline the stripes. Each one should be 1 inch in width. Length will vary, as they will be used to line different portions of the pie. Make sure to angle the edges to match the pie. Cut out dough based on the outlines. Cut out extras in case some brown.

Place on the bottom rack at 425°F for 45 minutes and bake until golden
Remove and let cool
Bake stars for 10 minutes
Bake stripes for 18-20 minutes
